Turkey Pot Roast
Ingredients
• 1 ¾ lbs Bowl & Basket™ Turkey Drumsticks, skin removed
• Bowl & Basket™ salt and pepper to taste
• ½ cup Bowl & Basket™ peeled onion, finely chopped
• 2 cloves Bowl & Basket ™ garlic, minced or pressed
• ½ tsp dried basil, crumbled
• ¼ tsp wholesome pantry organic™ thyme
• 1 cup Bowl & Basket™ turkey or chicken broth, fat removed
• 2 medium potatoes, pared and halved
• 3 medium carrots, peeled and cut into chunks
• 1 tbsp Bowl & Basket™ cornstarch
• ¼ cup cold water
• 2 Tbsp chopped fresh parsley
Directions
Place turkey drumsticks in a non-stick dutch oven. Salt and pepper to taste. Add onion, garlic, basil, thyme and broth. Bring to boil; cover and simmer over low heat (or bake at 375°F) until turkey is nearly tender, about 1 hour. Add potatoes and carrots. Cover and cook until vegetables are tender, about 20 minutes. Remove turkey and vegetables to heated platter and keep warm.
Skim any fat from pan juices and discard. Mix cornstarch and cold water and stir into simmering pan juices. Cook, stirring until sauce is thickened. To serve, spoon sauce over meat and vegetables. Garnish with parsley. Serves 4.
