Coconut - Curry Swai
Ingredients
• 1 ¼ lb Bowl & Basket™ frozen swai fillets, thawed and cut into 1-inch pieces
• 1 tbsp coconut oil
• 1 jar (15 oz) mango curry simmer sauce
• 1 cup frozen peas
• 2 large Roma tomatoes, chopped
• 2 tbsp chopped fresh cilantro
• Cooked basmati or cauliflower rice and/or mini naan for serving (optional)
Directions
1. Pat fish dry with paper towel; sprinkle with ½ tsp each salt and pepper. In large non-stick skillet, heat oil over Medium-High heat; add fish and cook 5 minutes or until opaque, turning once. Add sauce and peas; heat to a simmer. Reduce heat to Medium-Low and simmer 5 minutes, stirring occasionally; stir in tomatoes and cilantro. Makes about 5 cups.
2. Serve fish and sauce over rice along with naan, if desired.
Keep Frozen until Ready to Use
