Potato-Crusted Catfish
Ingredients
• 4 bowl & basket™ frozen catfish fillets (about 4 oz each), thawed
• ¾ cup refrigerated shredded hash brown potatoes
• 2 tbsp mayonnaise
• 2 tsp seasoning
• 2 tbsp vegetable oil
• Chopped fresh chives, tartar sauce and/or cocktail sauce for serving (optional)
Directions
1. Pat catfish dry with paper towel. In small bowl, stir potatoes, mayonnaise and seasoning: press into top of catfish fillets.
2. In large skillet, heat oil over Medium-High heat; add catfish, potato side down, and cook for 7 minutes or until internal temperature reaches 145°F, turning once.
3. Serve catfish sprinkled with chives along with tartar and/or cocktail sauce, if desired.
Keep Frozen until Ready to Use
