Poached Salmon with Green Beans Almandine & Baby Potatoes
Ingredients
• 1 bowl & basket™ Atlantic salmon portion
• 1 cup white cooking wine
• 1 lemon, thinly sliced
• 2 tbsp chopped dill, divided
• 1 bag (12 oz) steam-in-bag green beans
• baby potatoes
• salt and pepper to taste
• 2 tbsp slivered almonds
Directions
1. Sprinkle salmon portion with ¼ tsp each salt and pepper.
2. In 5- to 6-quart slow cooker, add wine and salmon portion; top salmon with lemon slices and 1 tbsp dill.
3. Cover and cook on Low 1 hour or High 30 minutes or until internal temperature of salmon reaches 145°F and fish is opaque and easily flakes with a fork.
4. Prepare green beans and baby potatoes as directed. Serve salmon with all vegetables in a large platter and sprinkle all with remaining 1 tbsp of dill. Toss green beans with slivered almonds before serving.
