Wheat bran is the fiber-rich outer layer of the wheat berry, but it's much more than an excellent source of fiber. Enjoy its nutty flavor in baked goods like muffins, quick breads, cookies and pancakes, or sprinkle on casseroles and cobblers before baking.
Molasses Bran Muffins
1 cup Bob's Red Mill® Wheat Bran
1 1/2 cups Bob's Red Mill® Whole Wheat Flour
1 tsp baking soda
1 tsp baking powder
1/4 cup nuts, chopped
1/2 cup raisings
3/4 cup applesauce
1 cup milk
1/2 cup molasses or honey
2 tbsp oil
2 eggs, beaten
Preheat oven to 400°F. Grease a 12-cup muffin tin or line with paper baking cups. In a large bowl, combine wheat bran, flour, baking soda and baking powder. Stir in nuts and raisins. In a separate bowl, combine applesauce, milk, molasses, oil and eggs. Add to dry ingredients and stir just until moistened. Spoon into prepared muffin tin and bake for 15-20 minutes, until tops are golden brown.
~ Makes 12 muffins.
Store in a cool, dry place.
Keeps best refrigerated or frozen after opening.
