Pearl couscous are delightfully nutty, chewy balls of toasted semolina flour. This versatile alternative to pasta or rice is excellent in salads or topped with your favorite pasta sauce.
Pearl Couscous with Pesto and Vegetables
2 tbsp olive oil
1 cup Bob's Red Mill® Pearl Couscous
1 1/2 cups water
1/2 cup pesto*
1/2 cup diced zucchini
1/2 cup cherry tomatoes
Heat olive oil in a 2-quart saucepan over medium-high heat. Add couscous and stir until lightly browned, about 5 minutes. Slowly pour in water. Lower heat and simmer gently, covered, until liquid is absorbed, about 10 minutes. Remove from heat and stir in pesto. Stir in vegetables. Serve at room temperature. Makes 4 servings.
*Pesto
2 cups basil, packed
2 tbsp pine nut
2 garlic cloves
1/2 cup olive oil
1/2 cup grated parmesan cheese
Process basil, pine nuts and garlic in a food processor until finely chopped. With the machine running, slowly stream in olive oil and continue to process until smooth. Stir in cheese. Store chilled.
Store in a cool, dry place.
