Milled form short-grain "sticky rice," Sweet White Rice Flour has exceptional binding qualities and is great for gluten free muffins, pastries and cakes. It's also the essential ingredients for mochi, a Japanese rice cake that symbolizes good fortune. Despite the name, this flour isn't sweet; its mild taste makes it an ideal thickener for soups, sauces and gravies.

Butter Mochi
1 cup Bob's Red Mill® Sweet White Rice Flour
1 cup sugar
1 tsp baking powder
13 oz can full-fat coconut milk or 1 1/2 cups whole milk
2 eggs
1/4 cup melted butter
1 tsp vanilla extract
Preheat oven to 325°F; oil an 8 x 8-inch baking dish. In a small bowl, combine flour, sugar and baking powder. In a larger bowl, whisk together milk, egg, butter and vanilla extract. Add the dry ingredients to the wet ingredients and mix well to combine. Pour batter into the prepared pan. Bake until set, about 1 hour. Let cool completely, then portion and remove from pan. Store chilled.
Makes 16-24 servings.
Store in a cool, dry place. Keeps best refrigerated or frozen after opening.
