Bulgur is made from hard red wheat that has been parboiled, dried, and cracked. Use in Tabbouleh, salads, and pilafs.

Tabbouleh
1 cup Bob's Red Mill® Bulgur
1 cup boiling water
3 cups finely chopped parsley
1/4 cup finely chopped mint
1/4 cup finely minced scallions
2 medium tomatoes, seeded and diced
1 medium cucumber, seeded and diced
1/2 tsp salt
1/4 tsp ground cumin
1/4 tsp ground black pepper
3 tbsp lemon juice
3 tbsp olive oil
Combine bulgur and boiling water and let soak for 1 hour. Drain well and squeeze out any excess water. In a large bowl, combine drained bulgur, parsley, mint, scallions, tomatoes, cucumber, salt, cumin, black pepper and lemon juice. Chill for 1 hour. Immediately before serving, add olive oil and toss well.
Makes 6 servings.
Store in a cool, dry place.
