You may have heard that I eat a bowl of oatmeal every day. That's because I believe in the powerful nutrition of whole grains, and I'm proud to say this whole grain oat flour contains all of the fiber and nutrients of the high quality whole grain oats milled to make it. Banana Oat Muffins
2 cups Bob's Red Mill® Oat Flour
1/2 cup rolled oats
2 tsp baking powder
1 tsp baking soda
1/2 tsp Salt
1 cup mashed banana, about 3 small bananas
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/2 cup milk
1/3 cup oil
2 eggs
1 tsp vanilla extract
Preheat oven to 400°F. Line a 12-cup muffin tin with paper liners. In a medium bowl, combine oat flour, oats, baking powder, baking soda and salt. In a large bowl, combine banana, sugars, milk, oil, eggs and vanilla, mixing thoroughly.
Stir flour mixture into banana mixture until well combined. Scoop batter into muffin tin, filling cups 3/4 full. Bake the muffins until a toothpick inserted in the center comes out clean, 18-20 minutes. Allow muffins to cool slightly, about 2-3 minutes, then remove from pan to finish cooling.
Makes 12 muffins.
Store in a cool, dry place. Keeps best refrigerated or frozen after opening.
