Korean Style BBQ Beef Bowl
Ready in 20 minutes, serves 4
You'll need...
• 4 cups cooked Ben's Original™ Whole Grain Brown Rice
• 1 tbsp. cooking oil
• 4 eggs, cooked sunny side up
• 1 pound skirt steak, very thinly sliced
• 2 tbsp. seasoned rice vinegar
• 1 cup carrots, peeled and shredded
• 1 medium cucumber, sliced thinly
• ¼ cup Korean barbeque sauce
• 5 oz. baby spinach
Recipe instructions:
1. Combine carrot, cucumber, and seasoned rice vinegar in a small bowl and stir to mix and set aside.
2. Heat 1 tbsp. cooking oil in a medium skillet over medium-high heat. Brown beef for 2-3 minutes. Add Korean barbeque sauce, continue cooking until sauce is thickened.
3. Divide cooked rice between 4 bowls, add beef and egg. Remove cucumbers and carrots from the vinegar and add to the rice bowls.
4. Place spinach and 1 tsp. water into the skillet used to cook the beef, return to low heat cover and wilt for 2 minutes. Season to taste and add to the rice bowls. Garnish with sliced green onions if desired.
