Canadian bacon & scrambled egg sandwich
What you need:
4 slices Canadian bacon, heated
1 tbsp. butter
6 large eggs
4 Bays Original English Muffins split & toasted lightly brown (not a dark brown color)
1/2 c. chive-flavored or plain cream cheese
Salt & pepper to taste
What to do:
Melt butter in a large skillet over medium heat.
Beat together eggs, salt and pepper in a bowl; add to skillet and scramble to desired doneness.
Spread 4 muffin halves with cream cheese, then top with Canadian bacon and scrambled eggs and remaining muffin halves.
Makes 4 servings.
