Beans & greens salad
Makes 4 servings.
• 1 jar (15.5 oz.) Aunt Nellie's® 3 Bean Salad
• 4 cups fresh salad greens
• 1 small carrot, shredded
• 2 tbsp lemon juice or white wine vinegar
• 2 tbsp olive oil
• 1/4 tsp ground black pepper
• 2 tbsp shaved Parmesan or Asiago cheese
Drain bean salad well; reserve 1/2 cup liquid.
In small bowl, combine bean liquid and lemon juice/vinegar. Whisk in oil. Add pepper.
Place salad greens in bowl. Add carrot, bean salad and dressing. Toss gently to coat. Arrange on platter; top with shaved cheese.
