Basic Green Lentils
Yields 3 Cups
2 Cups Arrowhead Mills® Green Lentils
4 Cups Cold Water
Rinse and sort lentils.
Place lentils with water in a large sauce pan.
Bring to boil, reduce heat and simmer for 30 to 45 minutes, or until done.
Lentil Tacos
Yields 5 Tacos
2 Cups Arrowhead Mills® Green Lentils, Cooked
½ Cup Vegetable Broth
1 Tbsp Olive Oil
³/₄ Cup Yellow Onion, Diced
2 Garlic Cloves, Minced
1 Tbsp Tomato Paste
½ Tbsp Chili Powder
½ Tsp Cumin
¼ Tsp Oregano
³/₄ Tsp Salt
¹/₈ Tsp Cayenne Pepper
¼ Tsp Black Pepper
¼ Cup Freshly Squeezed Lime Juice
Prepare lentils according to cooking instructions.
Heat olive oil in skillet over medium high heat. Sauté onion until softened, add minced garlic and stir constantly for 1 minute.
Add the tomato paste and spices, cook for one minute, stirring constantly.
Add the cooked lentils and stir until well blended.
Pour in vegetable broth and cook uncovered for 2 to 3 minutes or until most of the broth has been absorbed.
Remove from heat and stir in lime juice.
Serve warm on tortillas and garnish with taco trimmings.
Tips and Tricks
Green Lentils are nutritious as well as delicious. When combined with rice you get a complete protein. Enjoy them with brown rice in a casserole or season with garlic and onions for a tasty side dish. Great for soups and mashing into patties!
