Arrowhead Mills Organic Brown Rice Flour, 24 oz
Gluten-Free Double Chocolate Cookies*
Yields 30-34 Cookies
1¼ cup Arrowhead Mills® Brown Rice Flour
¾ cup Butter, Softened
¼ cup Sugar
½ cup Brown Sugar
2 Eggs
1 tsp Vanilla
½ cup Cocoa Powder
1 tsp Baking Powder
¼ tsp Salt
1 cup Chocolate Chips
Preheat oven to 375°F. Lightly spray two cookie sheets with non-stick cooking spray, or line with parchment paper.
In a mixing bowl combine rice flour, cocoa powder, baking powder, and salt. Set aside.
In a separate mixing bowl combine softened butter, sugar, and brown sugar, mix until fluffy. Add eggs one at a time und combined. Add vanilla. Mix until fully combined.
Add dry ingredients and chocolate chips to wet ingredients mix until combined.
Scoop by tablespoonful onto prepared baking sheet. Bake for 10-12 minutes†.

Gluten-Free Brown Rice Gravy*
Yields 2 Cups Gravy
2½ tbsp Arrowhead Mills® Brown Rice Flour
1½ cup Broth (Chicken, Vegetable, or Turkey)
3 tbsp Butter
Salt & Black Pepper to Taste
In a small saucepan over medium heat, melt butter. Using a whisk, add brown rice flour, whisk until combined and continue to whisk allowing paste to cook 1-2 minutes.
Slowly whisk in broth. Continue whisking and cook until gravy thickens and starts to bubble. If gravy is too thick, add more broth to thin to desired consistency. Season with salt and pepper to taste.

Tips and Tricks
Brown rice flour adds lightness to cakes, enhances crispness in cookies and works well in pie crusts. Due to its neutral flavor, it also works well in some sauces or as a crispy coating for fried foods. Use 2 tbsp of brown rice flour in sauces instead of 1 tbsp of all-purpose flour!
