A perfect blend of sea salt and crushed black pepper on a sweet potato crinkle cut fry
Roasted Red Pepper Coulis Dip
Makes: 1 cup
Ingredients:
3/4 cup roasted red pepper strips
1/4 cup heavy cream
2 tbsp. grated parmesan cheese
1/2 tsp. salt
1/4 tsp. cracked black pepper
Optional:
1/2 tsp. balsamic vinegar
Directions:
In food processor, purée roasted red pepper strips until smooth. Add heavy cream and parmesan cheese and continue to purée. Simmer in a heavy bottom sauce pan for approximately 5 minutes. Add salt and pepper, chill and serve.
