Flounder with Julienned Vegetables
• Oil, for frying
• 2 lbs flounder or other white fish fillets
• 1 cup flour
• 3 eggs
• 2 cups 4C Plain Panko Bread Crumbs
Put flour into a dish.
Beat the eggs in a separate bowl.
Place Panko Crumbs into a shallow dish.
Dip the flounder into the flour, then into the egg and then into the Panko Crumbs.
Heat oil. Add fish and fry for 3-4 minutes on each side, or until golden brown.
Remove to a paper towel lined tray.
Serve with julienned vegetables.
Serves 3-5.
