Chicken Parmesan - Serves 4
• 4 boneless, skinless, thin sliced chicken breasts
• 3 eggs
• 2 cups 4C Gluten Free Panko Crumbs
• 2 cups 4C HomeStyle Parmesan Cheese
• 1 teaspoon basil, oregano, paprika, garlic powder, salt & pepper
• 2 tablespoons olive oil
• 2 cups marinara sauce
• 4 slices fresh mozzarella
• 4 cups zucchini noodles
1. Preheat oven to 375° F. Beat eggs in a bowl.
2. Combine 4C crumbs, 4C cheese, herb and spices into another bowl.
3. Dip chicken into eggs, then crumbs, pressing to adhere.
4. Fry in heated oil until chicken is golden brown on both sides. Remove from heat.
5. Add marinara sauce to the pan and top each piece of chicken with mozzarella.
6. Bake in oven for 30 minutes or until internal temperature reaches 165° F.
7. Serve over zucchini noodles.
